Tortilla Pizza

Tonight was one of those nights. The kids were enjoying the beautiful weather outside with friends, my husband was stuck at work, and I was focused on prepping for the upcoming school year. Before I knew it, the kids were done playing outside and were looking for dinner. I ran to my collection of THRIVE veggies to see what I could throw together super fast and came up with this recipe (on the fly! I’m so happy it worked out).

Tortilla Pizza

Time: the time from “Seriously? It’s 7pm already?” to “Dinner’s Ready!!” was about 15 minutes

Ingredients (for the pizza shown in the pic)
*Ingredient measurements non specific. Measure ingredients “to taste”

2 Tortillas
pizza sauce
mozzarella cheese
THRIVE green bell peppers
THRIVE sliced onions
THRIVE ground beef

other topping possibilities:
THRIVE sausage crumbles
THRIVE spinach
THRIVE pineapple
THRIVE ham

Directions
Preheat oven to 400º

Add THRIVE ingredients to a bowl and add enough water to cover. Allow to rehydrate for about 5 minutes.

Heat tortillas one at a time in a hot, oiled frying pan (only takes a few seconds per side to get them crispy).

Place one tortilla on a baking sheet that is lined with tin foil.

Add pizza sauce & cheese

Place second tortilla on top of the first and add sauce/cheese.

Drain excess water out of the THRIVE ingredients bowl and add ingredients to the top tortilla.

Bake tortilla pizza for about 8 minutes (or until the cheese is bubbly & golden)

Allow to cool for a few minutes before you slice it up.
